A great way to mix up those morning eggs is by adding goat cheese, and this goat cheese omelette is the place to start. Tangy chèvre makes gooey, cheesy pockets in the savory eggs, punctuated with the oniony finish of fresh chives.
Omelettes are quick to make, and once you’ve gotten the hang of it, they’re ideal for breakfast or a fancy brunch, made to order. The goat cheese adds just the right hint of sophistication, but it works for 5-year-olds, too. (Speaking from personal experience here!)
What you’ll need
It’s amazing the amount of flavor that comes from a handful of simple ingredients! The earthy flavor of goat cheese adds a unique element to the already irresistible omelette.
Here’s what you’ll need:
- Eggs
- Fresh goat cheese, aka chèvre, sold in a log
- Chives
- Salt and pepper
- Olive oil, for cooking
If you’d like, you can get creative and add additional vegetables, like a few handfuls of sautéed spinach or sautéed mushrooms. Just make sure the vegetables are cooked before adding them to the omelette.

Tips before you start
This goat cheese omelette uses the American omelette technique rather than the French technique, like in my Classic Omelette. You’ll cook the eggs a bit longer and make a half-circle shape instead of a roll. It can be a little free form! Here are a few notes on the process:
- Before you start, read the entire recipe. The cooking process goes fast. Head to the recipe below and take a quick read-through before you start.
- Prep everything before cooking. Have your eggs, cheese, and chives all prepped and ready to go before you turn on the heat.
- In a small 8-inch skillet, cook the eggs 2 minutes until mostly set. The skillet size is important to get the correct size.
- Add the goat cheese, then fold in half and cook 1 minute. It’s ok if the top breaks a little. It will stay together once it’s cooked.
Making omelettes for a crowd
Want to make goat cheese omelettes when you’re entertaining? It can be a little daunting to whip them up to order, so here are a few tips for the process:
- Whisk up a big bowl of all the servings of eggs. Add approximately 6 tablespoons of the eggs to the skillet for each omelette. That’s a scant ½ cup or a little over ⅓ cup.
- Keep the cooked omelettes warm in a 200-degree oven while you make the other omelettes. Place them on a greased or parchment-lined baking sheet.
Serve them with a simple green salad, hash browns or home fries, and healthy banana muffins for a tasty brunch! And don’t forget the mimosas.

Ingredients
- 2 eggs
- ⅛ teaspoon kosher salt
- 2 grinds fresh ground black pepper
- ½ teaspoon water
- ½ tablespoon olive oil
- ¼ cup goat cheese crumbles (1 ½ ounces)
- ½ tablespoon chopped chives
Instructions
- In a small bowl, crack the eggs. Whisk vigorously together with the kosher salt, pepper, and water until frothy and all egg whites are incorporated.
- Heat the olive oil in a small 8-inch non-stick skillet over medium heat.
- When the olive oil is shimmering, add the eggs and cook for 2 minutes without stirring. Shake the pan a bit to continue evenly cooking the eggs as they start to set.
- When egg is almost set, push a side of the omelette towards the center to allow any uncooked egg to drain underneath and cook.
- Add the goat cheese and chives on half of the circle of egg.
- Gently fold the other half over the top (you can leave some of the filling exposed as shown).
- Cook for 30 seconds to 1 minute until the egg is fully cooked. Use a spatula to carefully remove it to a plate and eat immediately.
