Are pomegranates healthy? There are lots of inflated claims around pomegranate nutrition. In fact, a popular pomegranate products company was hit with an FTC complaint around false advertising. That said, pomegranates are a very healthy fruit that’s part of a healthy diet! Here’s what we do know (source: Healthline):

  • Antioxidants: Pomegranates have lots of antioxidants: punicalagins and punicic acid, if you must know!
  • Fiber: 1 cup of seeds has 7 grams fiber.
  • Vitamin C: 1 cup of seeds has 30% of your daily vitamin C.
  • Other vitamins: Pomegranates are also a good source of vitamin E, folate, potassium, and vitamin K.
  • Sugar: Like most fruits, pomegranate does have sugar! 1 cup seeds has 24 grams sugar.

This pomegranate salad is absolutely irresistible! It stars a sweet tart salad dressing and the vibrant crunch of pomegranate seeds.

  1. Cut and seed the pomegranate
  2. Thinly slice the shallot. Thinly slice the apple (and toss it with 1 teaspoon lemon juice or vinegar if desired to prevent browning).
  3. Toast the pecans (don’t skip: this brings out the nutty flavor). Alternatively, make glazed pecans.
  4. Make the Apple Cider Vinegar Dressing or Pomegranate Vinaigrette
  5. Place the greens on a platter. Top with the pomegranate seeds, sliced shallot, toasted pecans, and goat cheese or feta cheese crumbles. Toss with the desired amount of dressing to taste. (Store the extra dressing refrigerated and warm to room temperature and whisk again before using.)
