  1. Determine whether to freeze the cucumbers. Frozen cucumber has a watery texture once it’s defrosted, and should only be used in blended recipes like smoothies and gazpacho. A better way to use up cucumbers is in recipes like cucumber salad or dill pickles.
  2. To freeze the cucumbers, slice them into rounds. (Or, you can puree or grate them before freezing if you plan to use them in a dip like tzatziki.)
  3. Line a rimmed baking sheet with parchment paper, then place the cucumbers on top in a single layer. Flash freeze for 1 hour.
  4. Transfer to a sealable freezer-safe bag. Use a straw to suck out all extra air, then seal the bag. Freeze for up to 3 months. Use directly in smoothies or cold soups, or you can also thaw them before using by placing the cucumbers in the refrigerator overnight.
