Prepare the cheese (block cheese): If the cheese is unopened in its original packaging, leave it: unless you want to slice or shred it first. Because the texture of block cheese becomes crumbly after freezing, you may want to portion it into slices or shred it. If sliced, place a piece of parchment or wax paper between each slice. Place the cheese in a freezer-safe resealable plastic bag.
Prepare the cheese (shredded cheese): Freeze the cheese in its original package if it’s unopened. If you’ve shredded the cheese yourself, place it in a resealable plastic bag.
Label: Label the cheese with the type and a “use by” date that is 3 months in the future.
Seal: Partially seal the bag, then use a straw to suck out all air from the bag.
Freeze: Place the bag in the freezer and freeze for up to 3 months. You can use frozen shredded mozzarella directly from the freezer in cooked dishes, like pizza, stuffed vegetables, and more. To defrost block cheese, place it in the refrigerator for 12 hours until soft. Use the thawed cheese within 3 to 4 days. Do not re-freeze frozen cheese.
