This bright and zingy ginger dressing is the best salad dressing! A few ingredients transform into fresh, sweet tart flavor.

Ginger Dijon Dressing

  • 1 1/2 tablespoons grated ginger, lightly packed (about 2-inch nub)
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey (or maple syrup)
  • 1/2 cup neutral oil (grapeseed, organic canola, organic vegetable oil or peanut oil)
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt

Instructions

  1. Peel the ginger with a spoon and mince it.
  2. Blend all ingredients in a small blender or immersion blender; or, double the recipe and blend it in a standard blender. (A smaller quantity won’t blend in a large blender or food processor.) Store refrigerated for up to 1 week; allow to come to room temperature before serving.
