Lupini beans are a tasty legume that’s a great source of plant-based protein! Here’s how to prepare them as a quick and easy side dish: with or without a quick vinaigrette.

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, smashed
  • 1 1/2 cups jarred lupini beans, peeled and drained (not dried)
  • Freshly ground black pepper
  • Kosher salt

Vinaigrette (optional): 

  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon Dijon mustard
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon kosher salt
  • 1 tablespoon olive oil

Instructions

  1. In a medium skillet, warm the olive oil and garlic over medium heat. When fragrant, add the beans and fresh ground black pepper and cook, stirring occasionally, for 2 to 3 minutes until warmed through.
  2. If using, in a medium bowl, stir together the vinaigrette. Toss the beans with the dressing and serve warm. If needed, add kosher salt to taste. Serve as a side dish, vegetarian or vegan protein, or on top of salads.
