4 cups chopped ripe peaches (about 4 medium), peel on and sliced
1/2 teaspoon lemon juice
Optional: Sugar, honey or maple syrup to taste, or 1 to 2 tablespoons simple syrup or sugar to make peach nectar for use in cocktails
Instructions
Place the peaches and lemon juice in a blender and blend until smooth. Strain through a fine mesh strainer into a glass. Taste and if desired add sugar, maple syrup or honey to taste; if making peach nectar add the simple syrup. If you have a juicer, you can simply pass all ingredients through a juicer.
Serve immediately over ice, or store in a covered jar for 2 to 3 days.
