For serving: Ice (try clear ice), pineapple wedges
Instructions
In a cocktail shaker, muddle the mint leaves. Add the rum, lime juice, pineapple juice, and simple syrup and fill the cocktail shaker with ice. Shake until cold.
Place ice into a glass, and strain in the liquid. Top off the glass with soda water. Garnish with additional mint leaves and pineapple wedges.
Pitcher variation (8 servings): Add 1 cup pineapple juice to this Mojito Pitcher recipe, and garnish with pineapple wedges and mint.
