Sweet Potato Pizza with Brie

A simple sweet & savory combination, this sweet potato pizza combines roasted sweet potatoes, creamy brie cheese, and peppery fresh arugula.

  1. Make the pizza dough: Follow the Best Pizza Dough recipe to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
  2. Place a pizza stone in the oven and preheat to 450°F. OR preheat your pizza oven (here’s the pizza oven we use).
  3. Slice the sweet potato into ⅛-inch thick rounds. In a small bowl, mix the slices with 1 teaspoon olive oil and ¼ teaspoon kosher salt. Line a baking sheet with parchment paper, then add the slices and roast until tender when pricked with a fork, about 9 to 10 minutes.
  4. Turn up the oven to 500°F. Meanwhile, mince the garlic and thinly slice the shallot.
  5. When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don’t have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see this video for instructions. Then gently place the dough onto the pizza peel.
  6. Brush the dough lightly with olive oil. Spread garlic evenly over the pizza, then add sweet potato rounds, torn pieces of Brie cheese and sliced shallots. Sprinkle with kosher salt.
  7. Transfer the pizza to the pizza stone using the pizza peel, then bake until the cheese is melted, about 5 to 7 minutes. While the pizza bakes, mix the arugula with a drizzle of olive oil and a pinch of kosher salt. When the pizza is baked, top with arugula and cool for 1 to 2 minutes, then cut into slices and serve.
